Obsessed by Cocktails

Over the weekend, we visited a restaurant (to be revealed later) that did something very neat – a cocktail menu.    I had an old-fashioned.    And this got me to thinking…
So what are the classic cocktails?   Who serves them in Baltimore?  Got a recipe?   What makes it classic?
C’mon people, I need help.

    The Manhattan:
    3-parts Canadian or Rye Whiskey
    1 part Sweet (Red) Vermouth
    1 dash bitters

    The Tom Collins:
    1-1/2 oz Gin
    1/2 oz Simple Syrup
    Juice of 1/2 Lemon
    Soda Water

    These were the drinks, along with The Old Fashioned and the good old Whisky Sour, my folks would make at their parties when I was growing up.
    I’m a Gin & Tonic guy myself.
