Homebrew

Beer is an extremely personal thing.  Making it yourself brings a whole different dimension to that.   When I brew a batch of beer, it is a challenge to push myself; to craft something as good or probably better than most things that you can buy.   

Simply said: I love good beer.

Ladybug Pale Ale

This started as my take on Dogfish Shelter Pale Ale (via BYO).    I recently renamed this – I’ve been experiencing a ton of ladybugs (20+) around my work desk area.   Nutty (walnut) and toasty character to this brew.    Firm hop bitterness but not overdone. Beer Label - Ladybug Pale Ale

Ingredients:

11.25 lbs Pale Malt
6.5 oz Crystal 120L
3 oz Amber Malt

Hops:

0.55 oz Warrior 16.0% AA 60 Min
0.55 oz Glacier 5.5% AA 10 Min
0.55 oz Simcoe 13.0% AA 0 Min

Yeast:

WLP005 – British Ale Yeast

Yield:

5.5 Gallons

Stats:

OG: 1.052 FG: 1.013 13.22 SRM 34.1 IBU

Oatmeal Stout

A dark, full-bodied, roasty ale with a slight oatmeal note in the background. It has a slight roasted-grain flavor and aroma, like bitter chocolate, which helps dry the finish.  A subtle earthy character makes this a beer perfect for the fall season and a crisp evening.

This beer would pair brilliantly with a Montreal spiced NY Strip.

Beer Label - Oatmeal Stout

Ingredients:

8 lbs 2-row pale malt
1 lb Flaked Oats
8 oz Chocolate Malt
4 oz Aromatic Malt
4 oz Crystal 80L Malt
8 oz Roasted Barley
 

Mashed at 153F – 78% Efficiency

Hops:

1.8 oz East Kent Goldings 5.0% AA 60 Minutes

Yeast:

WLP005 – British Ale Yeast

Yield:

5 Gallons

Stats:

OG: 1.059 FG: 1.015 24.7 SRM 33.7 IBU

Special Bitter (8B)

Very small changes to Jamil’s recipe from Brewing Classic Styles.    A flavorful yet refreshing session beer.  It has a balanced but firm bitterness, low hop character and a touch of fermentation character from the yeast.  Easy drinking and highly quaffable.

Ingredients:

8.87 lbs English 2-Row
0.5 lbs Aromatic
0.5 lbs Crystal 120
0.25 lbs Special Roast
   
  Single Infusion Mash @ 152F – 75% Efficiency

Hops:

0.9 oz Northern Brewer 6.5% AA 60 min
0.4 oz Northern Brewer 6.5% AA 20 min
0.4 oz Northern Brewer 6.5% AA 1 min

Yeast:

Safale S-04

Yield:

5.5 Gallons

American Pale Ale

This recipe originated from Abita Restoration Ale (one of Lyss’s favorites).   So this is my take on that beer.   It has become our “house” brew and I think Tom has brewed it several times also.

Ingredients:

10 lb Maris Otter Pale Malt
1 lb Cara-Pils
12 oz Crystal 40

Hops:

0.75 oz Cascade 5.5%AA 60 min
0.5 oz Centennial 10%AA 15 min
0.25 oz Centennial Dry

Yeast:

WLP060 – American Ale Yeast Blend  

I was lucky to have the opportunity to brew yesterday so Tom and I made a double batch that we split.   We changed a few things on this batch – the hopping schedule, added a little pils malt to replicate the original and yeast selection.   Yield: 5.5 gallons, OG: 1.058

English IPA

Chris wanted to brew so I told him OK if he goes outside and cleans the pot!  (It was really cold on Presidents Day – 2/16/09). 

Since this was a spur of the moment decision to brew, I put this together from things around the house.   This recipe probably isn’t true to English standards but close enough that the bones are there to hold up nicely.

Still need a good name for this recipe!

Ingredients:

12.25 lb Maris Otter Pale Malt
8 oz Wheat Malt
8 oz Crystal 40
6 oz Crystal 80
4 oz Special B
4 oz Aromatic
   
  Single Infusion Mash @ 152F – 60 Minutes
OG: 1.065

Hops:

1.9 oz Challenger 6.1% AA 60 min
1.5 oz Fuggles 5.0% AA 10 min
1.6 oz Kent Goldings 4.8% AA 0 min

 

Yeast:

WLP002 – English Ale 67F

Smokin’ Robust Porter

This was brewed back in the beginning of November ‘08.   It has been well received by Tim and everyone who tried it during his super bowl party.

Beers like this + cold weather = bliss.

Ingredients:

11.75 lb Maris Otter Pale Malt
4 oz Flaked Rye
8 oz Belgian Special B
8 oz Rye Malt
8 oz Chocolate Malt
2 oz Black Malt
2 oz Smoked Malt
   
  Single Infusion Mash @ 153F – 60 Minutes
OG: 1.056

Hops:

3 oz Williamette 4.3% AA 60 Minutes
1 oz Fuggles 3.67% AA 15 Minutes
1 oz Fuggles 3.67% AA Dry Hopped

Yeast:

WLP002 – English Ale 64F (21 Days)
